1 medium size eggplant, chopped
2 small zucchini, diced

2 tbsp olive oil
1 (24 oz) jar chunky style Italian sauce
1/2 tsp dried oregano leaves, crushed
2 tbsp fresh parsley, chopped
1 tbsp grated Parmesan cheese
