Salads are very important, and we all know that ! My favorites are those which can make you forget about the main dish ! Like this loaded baked potato salad !
INGREDIENTS
4 large russet potatoes.
½ cup of mayonnaise.
½ cup of sour cream.
½ cup of shredded extra sharp cheddar.
4 tbsps of stone ground or yellow mustard.
¼ cup of chopped chives, divided.
8 strips of cooked crisp and chopped thick cut bacon.
Salt and fresh cracked black pepper.
