Spicy chicken with red and green bell peppers for that southern taste!
Serves 4
INGREDIENTS:
- 4 tbsp. olive oil
- 12 ounces chicken breast, cut into strips
- 4 tbsp. powdered paprika
- 2 tbsp. turmeric
- Salt and pepper
- Garlic powder to taste
- 1 large onion, thinly sliced
- 1 cup green bell pepper, cut into strips
- 1 cup red bell pepper, cut into strips
- 1 cup tomato salsa
- 8 ounces cheddar cheese, grated
DIRECTIONS:
- Pre-heat the oven to 425°F.
- Prepare a casserole by oiling it lightly.
- Fry the chicken strips in the oil in a skillet until brown on all sides.
- Add the spices and seasoning.
- When the chicken is nearly done remove from the skillet and set aside.
- Add the onions and peppers to the skillet and cook for a few minutes until tender but still with a bite.
- Put the chicken into the casserole and top with the pepper mixture.
- Spoon the salsa on top and sprinkle over the grated cheese.
- Place in the oven for about 10 minutes to heat through and for the cheese to melt.
- Serve hot.
