THE INGREDIENTS:
- 4 green finely sliced onions
- 2 peeled and finely diced garlic cloves
- 50 g of grated ginger root
- 1 finely diced medium-hot chili pepper
- 7 cups of stock or chicken broth (or in case you’re a vegan, use vegetable stock)
THE INSTRUCTIONS:
- Combine the onions, ginger and garlic in a large pot. Then, saute them for a couple of minutes.
- After that, put the stock or broth and leave to boil.
- Finally, add chili and simmer for 5 minutes.
- Serve with warm bread.
TIPS
You can also use other spices if you do not like chili. You can use cinnamon, it is also full of health benefits.
Moreover, you can add butternut squash and carrots to make it healthier. Then, simmer until they become soft and puree them at the end.
This soup will be finally complete if you add chopped broccoli, sliced mushrooms and cubed organic chicken cutlets. Also, add some beans instead of chicken if you are vegan.
