2 tbsps of spicy brown mustard.
½ cup of all purpose flour.
1 tsp of black pepper.
2 large eggs.
1 pound of chicken breast tenders halved lengthwise.
¼ cup of plain 2% reduced fat greek yogurt.
1 tbsp of honey.
1 tsp of paprika.
1 tsp of coarse or kosher salt, divided.
1 cup of whole wheat panko (japanese bread crumbs).
3 tbsps of olive oil, divided.
