MAKES 4 SERVINGS
INGREDIENTS:
- 8 eggs
- 1/4 Cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 Cup finely chopped green onions, divided
- Nonstick cooking spray
- 4 slices Canadian bacon, cut in half
- 1 cup (4 ounces) shredded Swiss cheese
DIRECTIONS:
- Preheat broiler.
- Whisk together eggs, milk, salt and pepper in medium bowl until well blended. Stir in all but 2 tablespoons onions.
- Spray 12-inch ovenproof skillet with cooking spray; heat over medium-Iow heat until hot. Add egg mixture. Cover and cook 14 minutes or until almost set.
- Arrange bacon in pinwheel on top of egg mixture. Sprinkle with cheese; broil 2 minutes or until cheese is bubbly. Top with remaining 2 tablespoons onion. Cut into 4 wedges. Serve immediately.
